“Oh Canada 🇨🇦” Plant Based Ice Cream Cake

This cake tastes as good as it looks. We got the idea for this cake from an amazing book called “The 30 Day Alzheimer’s Solution”. We modified it and added our own spin on this recipe to make it perfect for Canada day. It’s the ideal cool treat to enjoy and celebrate our amazing country this week.


What you’ll need:


Base layer:


  • 2 cups frozen organic strawberries (about 20 strawberries)

  • 1 cup walnuts

  • 1/2 cup pitted dates (about 5 dates)

  • 1 cup unsweetened plant based milk


Middle layer:


  • 2 ripe frozen bananas

  • 2 cups soaked cashews

  • 1 cup pitted dates (about 10 dates)

  • 1/2 tsp vanilla extract

  • 1/4 cup unsweetened plant based milk


Top layer: (same as base layer)


  • 2 cups frozen organic strawberries ( about 20 strawberries)

  • 1 cup walnuts

  • 1/2 cup pitted dates (about 10 dates)

  • 1 cup unsweetened plant based milk


Directions:


Blend all base layer ingredients in a high speed blender and pour in a 10 inch springform pan. Freeze for about 2-3 hours or until fully set.


Blend all middle layer ingredients and pour over base and again freeze for another 2-3 hours or until fully set.


Finally, blend all top layer ingredients and pour over base and again freeze for another 2-3 hours or until fully set.


We decorated ours with fresh strawberries and a drizzle of dairy free white chocolate for an added treat.


Why we love this:


- No baking needed. This is a must when it’s roasting outside with the summer heat.

- “Ice cream” can be healthy. It doesn’t have to be full of dairy and refined sugars. It’s important to know you can still indulge in your favourite treats and still feel good and know you’re fuelling your body with nutrient dense foods.


- All whole food, healthy ingredients. This cake is full of fiber, healthy fats and antioxidants. Strawberries are a big part of this recipe, not only just for the “red” colour but for their impressive nutrition profile. Strawberries contain more vitamin C than oranges and are a great source of potassium which helps control water weight and bloating, perfect for summer weather.
